Fixed font Subject: OWA and View Full Headers?

My university uses Exchange 2007. I can access my email and calendar
via Apple Mail and iCal (yes I'm a Mac user) without a problem. For
example my "Internal Server Path" in Mail is EWS/Exchange.asmx
When I tried to configure a different laptop running Windows 7 and
Office 2007 I could not get Outlook to connect using the same email
server and Internal Server Path settings. It turns out Mail and OWS use
the Outlook Web Access interface.
Is there a Windows client that will do the same thing? I really don't
like using the actual web interface because I don't always use Internet
Explorer. I asked the admin and enabling IMAP is out of the question
due to "security concerns."

On another less important issue; does Exchange strip header information?
On gmail or Lavabit I can view full headers and see what client the
sender is using. Sometimes I use this information to diagnose a
problem. When I view full headers on the Exchange server either in Mail
or the web interface, I don't see that X-blah blah line.
It isn't a big deal since I can ask the user but it can save time.
